Anyone got any recipes for Horse please ?

My French cousin is coming to stay soon. I haven't seen him in years and would like to extend my hospitality to him.


I know the French consider Horse a delicacy, and have acquired a small one which I intend to slaughter and cook up for him. Trouble is I am having trouble finding any recipes. Can anyone offer any tips on how I can prepare Horse, to make tasty dishes which will impress him ? Thanks.Anyone got any recipes for Horse please ?
I personally would never eat horse... EW!!!! YUCK!!!!

PIECES OF HORSE MEAT











Ingredients





Horse meat





Tomato sauce





Extravirgin olive oil





Parsley, carrots,chilly pepper, laurel , celery











Take some horse meat cut in cubes and let it browning in a pan with some onion till it takes some taste.





Add 1 litre of tomato sauce every





kilo of meat and don’t forget to add carrots, parsley , celery and two leaves of laurel,





that bruised in the extravirgin olive oil





( like Salento DOP) and chilly pepper( diavolicchio) as you like it( the more it is the better is).





The cooking should happen over a very low heat, in a terracotta pot put in the fireside.





Take away the foam at the beginning of the cooking and let it cooking very slowly for 4 hours at least.





Serve it in small dishes accompanying with big slices of home made bread cooked on the embersAnyone got any recipes for Horse please ?
In France, though ppl eat horse, there usually is only a very small selection of horse meat (compared with beef, chicken, lamb) leading me to believe that not that many ppl eat horse or at least not often. If you are in the US or Canada, you can serve really tender beef and your cousin will love it! The French beef has little or no marbel and though it is healthier for you, it's tough and dry compared to good Texas beef.
Horse and Pepper Pie





Ingredients:


1 pound ground horse meat


2 cups sweet red peppers, with sauce


1 onion, chopped


1 (4.5 ounce) can sliced mushrooms, drained


1 cup shredded sharp Cheddar cheese


1 recipe pastry for a 9 inch double crust pie





Prep:


Place peppers, including liquid, into food processor; pulse until peppers are cut into small pieces.





Brown horse meat and onions. Add peppers, mushrooms, and cheese to meat mixture. Spoon into bottom crust. Cover with top crust, and


seal the edges.





Bake at 350 degrees F (175 degrees C) until crust is brown, and pie is heated through.





Serves 8
Save that horse. Serve up Alpo wrapped in a flour tortilla. Tell him it's called Mexican Food ';al le Cheval'; with horseradish on the side.
I don't think you should slaughter a horse and take his life away to impress your cousin. Are you needy?

Since he is visiting America, make him All-American dishes %26amp; keep the pony killing over there!!
You have to cook it for a long time at a slow heat to make it tender.
Please don't eat the horse! Horses are one of my favorite animals...not to eat.





It is most likely that the act is illegal stateside anyways. Also, horse is known as a very tough, gamy meat. You should leave it to the French professionals to execute their secret methods, and play it safe by giving your French cousin something else to eat.





A good idea would be to offer him a dish that you are known for, or that the region you live in is known for. This way, he would get a guaranteed delicious experience that is both sure to please and surely legal.
