Crockpot Chicken Recipes:

Slow-Cooker Rustic Chicken Stew

2 lbs. boneless, skinless chicken breasts, washed, patted dry, cut into 1-inch cubes

3 medium onions, peeled, quartered

2 large carrots, peeled, cut into 1-inch-thick slices

2 potatoes, peeled, cut into 1-inch cubes

2 cans (14 oz. each) chicken broth

1 t. celery seed

1 t. dry thyme leaves

1/2 t. black pepper

8 oz. mushrooms, cleaned, halved

1 C. frozen corn

1 C. frozen peas

In a 5-to-6-quart slow cooker, combine the chicken, onions, carrots, potatoes and broth. Stir in the celery seeds, thyme, pepper, mushrooms and corn.

Cover and cook on low until the chicken is done and the vegetables are tender, about 7 to 9 hours, or on high for 4 to 6 hours. Stir in the peas and cook until they're done, about 15 to 30 minutes. 8 servings.

Crockpot Savory Chicken and Vegetables

1 pound boneless, skinless chicken breasts, cut into bite size pieces

1 ( 16oz) pkg. frozen mixed vegetables

1 small onion chopped

1 cup sliced fresh mushrooms

1 large potato, peeled and cut into 1/4 inch cubes

1 1/4 cup water

2 Tbsp quick cooking tapioca

1 Tbsp fresh lemon juice

2 tsp chicken bouillon granules

1/2 tsp ground white pepper

1/4 tsp ground mustard

1/4 tsp crushed sage

1/4 tsp salt

1/8 tsp garlic powder

Pinch of turmeric

1/3 cup nonfat dry milk powder

Fresh minced parsley

Rinse chicken and pat dry with paper towels. Combine chicken, mixed vegetables, onion, mushrooms, and potato in 3 1/2 qt. crockpot.

In a small bowl, combine water, tapioca, lemon juice, bouillon granules white pepper, mustard, sage, salt, garlic powder, and turmeric. Pour over chicken mixture. Mix well.

Cover and cook on LOW 6 to 7 hours. Stir in dry milk and cook 15 minutes. Sprinkle each serving w/ parsley.
I like adding some apple juice to it so it doesn't dry out. Seasonings like garlic, Mrs. Dash, and pepperika work well with chicken. Cube some potatoes, cut carrots, greenbeans, yellow beans. Maybe throw in some salsa or tomatoe sauce to add some more color.

The nice part about crock pot cooking is coming home and knowing dinner is all set.
