Any recipes using blueberries please?

I have a young blueberry bush and have picked about 450g (1lb) of fruit from it this year.


I'd love to hear of your favourite recipes please.


I am hoping to have more fruit next year so the quantities don't have to be for a lb. I'm pretty good at adapting recipes up and down according to the ingredients I have. Thanks.Any recipes using blueberries please?

My grandmother used to blanch the fresh berries, pat off the excess water, sprinkle with sugar, and freeze them. To keep them from just freezing in a great big clump, she would spread them out on a cookie sheet and freeze them for several hours and then put them in a plastic bag with the date on it so we could have fresh blue berries all winter. You don't even have to thaw them when you use them later, just pop a handful in your pancake or muffin batter. She used the same method for currents, rasberries, and blackberries.

Blueberry Cheesecake





Batter





cooking spray


1 1/2 cups all-purpose flour


2 (1/4 ounce) envelopes yeast


1/4 cup sugar


1/4 teaspoon salt


2/3 cup milk (very warm 120-130 F)


1/4 cup butter or margarine, melted


1 egg





Blueberry Sauce





1 1/2 cups blueberries


1/3 cup sugar


1 tablespoon cornstarch


2 tablespoons cold water


1/2 teaspoon almond extract





Cheesecake





1 (8 ounce) package cream cheese, softened


1/2 cup sugar


1 tablespoon cornstarch


1/2 teaspoon pure vanilla extract


1 egg





Mix batter ingredients together in a pre-sprayed 8x8-inch baking dish. Allow mixture to rest while preparing blueberry sauce and cheesecake.


Combine blueberry sauce ingredients in a saucepan and bring to a boil. Boil for 1 to 2 minutes until sauce is thickened.


Whip cheesecake ingredients in a mixing bowl with an electric mixer until smooth.


Top batter with dollops of cheesecake mixture and blueberry sauce. Swirl mixtures together using a knife.


Bake by placing in a COLD oven; set temperature to 350掳F Bake for 30 minutes, until cheesecake is set.
Yogurt with blueberries





1 parcel blueberry jelly (powder)


180 grams blueberries


25 grams white sugar


450 grams yogurt


0.3 liter water


Dry nuts for dressing





In a pot we boil the water, and we prepare the blueberry jelly


We apportion the mix in four serving glasses and we put it in the fridge for two hours


We mix the blueberries, sugar and yogurt and with this mixture we fill the glasses (that we put in the fridge before) and we put them back to the fridge


Before serving we be powder with the dry nuts.

BLUEBERRY JAM





4 c. prepared fruit


2 tbsp. lemon juice


4 c. sugar


1 pkg. fruit pectin





Crush ripe blueberries, one layer at a time. Measure into 6-8 quart sauce pot. Add lemon juice. Measure sugar, set aside. Mix fruit pectin into fruit in pan. Place over high heat and stir until mixture comes to full boil. Cook gently 1 minute. Immediately add measured sugar and stir. Bring to full, rolling boil and boil for 1 minute, stirring constantly. Remove from heat, skim off foam with metal spoon, ladle into hot jars to 1/8 inch top of jars. Cover and process in boiling water bath 5 minutes. Makes 5 2/3 cups. SPICED Jam: Add 1/4 teaspoon each cinnamon, cloves and allspice to fruit along with lemon juice.
