Does anyone have any quick casserole recipes?

I'm looking for some easy casserole dishes to fix that won' t take up much time, when the whole family is on a very busy schedule.Does anyone have any quick casserole recipes?
Some main dishes, some side dishes.








KING RANCH CHICKEN CASSEROLE





1 large onion, chopped


1 large green bell pepper, chopped


2 tablespoons vegetable oil


2 cups chopped cooked chicken


1 (10 3/4-oz) can cream of chicken soup, undiluted


1 (10 3/4-oz) can cream of mushroom soup, undiluted


1 (10-oz) can diced tomato and green chiles


1 teaspoon chili powder


1/4 teaspoon salt


1/4 teaspoon garlic powder


1/4 teaspoon pepper


12 (6-inch) corn tortillas


2 cups (8 oz) shredded Cheddar cheese, divided





Sauté onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in chicken and next 7 ingredients; remove from heat.


Tear tortillas into 1-inch pieces; layer one-third of tortilla pieces in bottom of a lightly greased 13- x 9-inch baking dish. Top with one-third of chicken mixture and 2/3 cup cheese. Repeat layers twice.


Bake at 350° for 30 to 35 minutes.





Note: Freeze casserole up to 1 month, if desired. Thaw in refrigerator overnight, and bake as directed.


Yield: Makes 6 to 8 servings

HOT CHICKEN SALAD





Mix well:


1 can cream of chicken soup


1 Cup Sour Cream


1 Cup Mayonnaise





Add:


1/2 Cup chopped almonds


1/2 Cup chopped Scallions


2 Cups diced celery


2-3 Cups of pre-cooked chicken, coarsely chopped


2 Tbsp. chopped pimentos


2 tsp. of lemon juice





Mix well and spoon into a buttered 9X13” baking dish





Topping:


2Tbsp. melted butter


½ cup of either crushed corn flakes, potato chips, Ritz crackers, or chow mein noodles....mixed with melted butter





Bake 30 minutes at 350ºF...then add topping and bake 15 minutes more.

Shrimp Company Casserole





2 to 3 lbs. Shrimp, cooked, peeled, and cleaned


1 C. Rice, Cooked


1 C. Sharp Cheddar Cheese


1 can Mushroom Soup


1/2 C. Chopped Green Pepper


1/2 C. chopped Green Onions


1/2 C. chopped Celery


1 stick Butter


8 lemons, sliced very thin





Mix first four ingredients together. Sauté green peppers, green onions, and celery in butter. Add to shrimp mixture. Put into a long flat casserole and cover the top with lemon slices. Cook covered for about 20 minutes at 375ºF.

Cabbage Casserole





1 small cabbage or 1/2 large


1 med. Vidalia onion


1/2 stick margarine


salt and pepper


1/4 cup mayo.


1 can Cream of Mushroom soup





Topping:


1 stick (1/2 cup) margarine


1 cup grated sharp Cheddar Cheese


1 stack round butter crackers, crushed





Preheat oven to 350ºF.


Coarsely chop cabbage and place in 2 to 3 qt. casserole dish. Chop onion and place on top of cabbage. Melt 1/2 stick marg. and pour over cabbage. Sprinkle with salt and pepper to taste. In small bowl, mix soup and mayo together. Spread over top of cabbage mixture.





To make topping: Melt remaining stick of margarine. In small bowl, mix melted marg., grated cheese, and crushed crackers. Sprinkle cracker cheese mixture over top of casserole. Cover w/ foil and bake for 30 minutes. Remove foil and bake another 15 minutes until top is brown and inside is bubbly.

Conniosseur's Casserole





1 12 pz can white shoe peg corn drained


1 16 oz can French cut string beans drained


1/2 cup celery chopped


1/2 cup onion chopped


1 2 oz jar pimentos chopped


1/2 cup sour cream


1/2 cup sharp Cheddar cheese, grated


1 10 3/4 oz can cream of celery soup


1/2 tsp salt


1/2 tsp pepper





Topping:


1 cup Ritz cracker crumbs


1/2 stick butter, melted


1/2 cup slivered almonds





Mix all ingredients except topping. Place in 1 1/2 qt. casserole. Sprinkle topping over casserole.


Bake at 350 for 45 minutes. Serves 8.





(I have subbed water chestnuts chopped for the celery and it is very good.)

Savory Sweet Potatoes





3 cups cooked sweet potato (8-10 fresh or 2 [29-oz] cans; not BRUCE brand-ick!)


½ stick real butter


3 strips bacon


1 small onion, chopped


1½ cups grated sharp cheddar cheese, divided


Salt and black pepper to taste








Preheat oven to 350ºF. In 9';x13'; casserole dish, coarsely mash potatoes and butter with fork. (works best when potatoes are hot.) Fry bacon and drain well, then chop it. In bacon drippings, cook onion until clear. Add bacon pieces, onion, 1 cup cheese, salt, and pepper to potatoes, stirring with fork to combine all. Spread out evenly in pan.





Top with ½ cup cheddar cheese. Bake for 20 minutes.Does anyone have any quick casserole recipes?
Quickie Lasagna





Use ravioli (I like the trader joes stuff)





cook the ravioli half way and drain


In your Casserole dish cover the bottom with your favorite Marinara


Then a layer of ravioli, more sauce, shredded mozzarella


and keep going with the layers.





You can add meat if you like. I have used the Traders Joes chicken sausage...came out great.


Serve with a salad and your good to go. The great thing about this is your ingredients are inside the ravioli.

Burrito Bake





1 bag frozen beef%26amp;bean burritos.


place frozen burrito's in casserole dish


pour a can of chili over them


cover with shredded cheddar cheese


top with diced fresh tomatoes and sliced black olives.


bake at 350 for one hour covered. Serve with sour cream





Chicken over Broccoli





Put 1 bag of frozen chopped broccoli in a casserole dish


Place raw chicken cutlets or chicken breasts over broccoli


pour 2 cans of campbells cream of chicken soup over chicken


put 2 tablespoons of miracle whip on soup, and swirl it all together with a spoon. Sprinkle bread crumbs on top


bake at 350 for 1 hour covered serve over cooked egg noodles.





Potato and ham bake


peel and cut potatoes in chunks


cut chunks of ham


put potatoes and ham in casserole dish


pour in 2 cans cream of mushroom soup


add shredded cheddar cheese


mix it all together and bake coverd at 350 until potatoes are done


uncover and top with crushed potatoe chips for 10 more minutes.





Quick chicken N' bisquits





put cooked cubed chicken in casserole dish


add frozen mixed veggies


cover with prepared white sauce mix


spoon prepared bisquick bisquit batter on top and bake uncovered according to bisquit recipe directions.
Something fattening, gassy and good.


one can of chili


shredded cheese


fritos corn chips.

Try this one.......it is my favorite.


Take four boneless skinless chicken breast and boil them until cooked. Then boil a head of broccoili. In a bowl mix together 250 ml of lite sour cream and 250ml lite mayo. Add salt pepper and garlic powder. Stir.


In a casserole pan, cover the bottom with seasoned bread crumbs, put cut up cooked chicken breast on top of crumbs. put cream sauce over the chicken. Put cooked broccoli over the sauce and add 2 cups of shredded cheese on top. bake in oven on 350 for thirty minutes and voila! Serve with french loaf and white wine.
VEGETABLE CASSEROLE


2lbs. California blend veg's.


2 sticks margarine


1 package Velveeta cheese slices


1 single pkg. Ritz crackers crushed





cook veg's. until tender, salt drain,leave a little water in veg's. in large casserole dish. 1 stick butter over veg's. put cheese slices on top, mix crackers and butter, put on top of casserole and bake until casserole bubbles at 350.
Take cooked chicken and stir in cream of chicken or cream of mushroom soup and whatever other seasonings you may want and then cover with prepared stove top stuffing and bake until heated through
Wild Rice and Ground Beef Casserole





1 cup of wild rice or 1 small package of long grain rice


1/2 pound of fresh mushrooms, sliced


1 cup of celery, sliced


1 medium onion, chopped


1/4 cup of butter


2 pounds of ground beef


1/2 teaspoon of paprika


1/2 teaspoon of salt


1/2 teaspoon of pepper


1/2 teaspoon of thyme


1 bay leaf, crumbled


2 cans of cream of mushroom soup


1/4 cup of milk


1/4 cup of fresh parsley, chopped





Cook rice according to package directions with water and salt. Saute mushrooms, celery and onion in butter for 5 minutes. Brown ground beef in skillet. Mix rice, sauted vegetables and ground beef. Add paprika, salt, pepper, thyme and bay leaf. Stir in soup, milk and parsley. Turn into a large lightly greased casserole dish and cover. Cook in a 350 degree oven for 45 minutes.
Chicken Broccoli Bake:





Pre cooked chicken strips, chopped


frozen broccoli, partially thawed


cream of cheddar cheese soup


about 3/4 cup sour cream


1/2 stick melted butter


cooked white rice


minced onion if you want





Mix all in a casserole and bake at 350 for 30 minutes. This takes 10 minutes to put together.





Taco Salad (Great meal)





1 lb ground round, cooked, drained and made with a taco seasoning packet.


1/2 bag (or more) doritos


1 8 ounce shredded mexican cheese


diced onion


shredded lettuce


black olives, sliced





Cook the meat, make into taco meat. In a large bowl crush up some doritos into bite sized pieces., add cheese and onions and lettuce and olives and add meat and stir to mix up.





You could add anything to this....tomatos, green onion, salsa, sour cream, jalapenos....





This whole thing takes 15 minutes to get on the table.





Spaghetti Bake:





1 box any shaped noodle, cooked and not rinsed.


1 lb ground round, cooked and drained


onion


garlic


salt, pepper, parsley, garlic powder, onion powder, italian seasoning (all optional)


1 jar any flavor spaghetti sauce


1 can of mushrooms (optional)


1 8 ounce bag shredded mozz cheese





While the water boils for noodles, add some oil to a pan, add diced onions, minced garlic, and saute for 3 minutes, add meat, cook till done and drain. Boil noodles. When all is done get a large bowl and mix it all up and then add it to a casserole dish and bake for about 45 minutes at 350-375. Good with bagged salad and bread you can cook in same stove with casserole.

two bags of tater tots, two cans of cream of mushroom soup a bag of sharp cheddar cheese and a lbs of hamberger. layer one bag of tots in a casserole pan half lbs of beef half bag of cheese one can of soups then repeat bake at 350 45 mins. whole meal done.
Baked ziti. Here's my easy version. Cook up your ziti and drain. Empty jar of good quality pasta sauce into pot and add the ziti back in and stir until ziti is coated. Empty half into casserole dish, top with cheese and repeat layers. Bake.

Aztec Casserole


9 (6-inch) corn tortillas, halved


2 (10 ounce) cans enchilada sauce


1 1/2 to 2 cups sour cream


2 cups shredded Cheddar cheese


2 (4 ounce) cans chopped green chile peppers


1 cup corn


1 pound boneless chicken breast meat, cooked and shredded





Preheat the oven to 350 degrees F.





In a medium bowl, combine the sour cream, cheese, chile peppers, corn, and chicken. Mix together well.





Dip 9 tortilla halves into the enchilada sauce, and arrange them in the bottom of a lightly greased 9 x 13-inch baking dish. Spread 1/2 of the chicken mixture over the tortilla layer. Repeat.





Bake for 25 to 30 minutes, or until the center is heated through.





Makes 6 to 8 servings.








Lone Star Pork Chop Skillet


4 boneless, butterflied pork chops,


cut 1/2 inch thick, well trimmed


1 teaspoon ground cumin


1/2 teaspoon salt


2 teaspoons olive oil


1 clove garlic


1 medium onion, cut into thin wedges


1 (8 ounce) can stewed tomatoes


1/3 cup picante sauce


2 tablespoons chopped cilantro


Hot cooked rice





Sprinkle both sides of chops with cumin and salt.





Heat oil in 10-inch skillet over medium-high heat. Brown chops on both sides, about 2 to 3 minutes per side. Remove and reserve. Reduce heat. Add garlic and onion to skillet; add chops, simmer uncovered 10 to 12 minutes, turning chops after 5 minutes. Remove chops to serving plate; keep warm.





Add tomatoes and picante sauce to skillet to make sauce. Cook sauce over high heat until thickened, 1 to 2 minutes. Arrange chops over rice. Spoon sauce over rice; sprinkle with cilantro.





Serve with additional picante sauce.











Stroganoff Casserole





2 cups uncooked egg noodles**


2 pounds boneless pork loin


1 tablespoon vegetable oil


2 (15 ounce) cans corn, including liquid


2 (4 ounce) cans mushrooms, optional


1 (10 3/4 ounce) can condensed cream mushroom soup


1 envelope beefy onion or mushroom soup mix


1 cup sour cream, regular or reduced fat


Fresh parsley, to garnish





Cook noodles according to package directions. Drain.





Trim pork of excess fat, cut into 3/4-inch cubes.





Heat oil in a large skillet or Dutch oven, add pork and stir-fry until browned and cooked through. Stir in condensed soup, soup mix, corn (including liquid) and mushrooms (if used). Reduce heat to low, cover and simmer until pork is tender and juice is partially evaporated - do not burn dry. Stir in drained noodles and the sour cream. Heat through. Garnish with snipped parsley.





NOTE: If noodles are large, they will take up more space in the cup - adjust proportion to 3 cups, as needed.





Recipe serves 6 to 8.











Sausage Casserole


1 pound pork sausage


3/4 pound shredded Cheddar cheese


1 pint sour cream


10 eggs, beaten


Salt and pepper to taste





Preheat oven to 350 degrees F. Spray or lightly grease 9 x 12-inch ovenproof casserole.





Brown and drain the sausage, then crumble it.





Spread half the sausage in prepared pan. Layer with half the cheese. By spoonfuls, dab half the sour cream on top of the sausage and cheese. Then add the remaining cheese and dab on the remaining sour cream.





Mix the eggs and remaining sausage together and pour over the casserole. Bake for 40 minutes or until set.
