Instructions





1 bx Duncan Hines Lemon Supreme cake mix 1 ea 4-serving-size box instant lemon pudding mix 1 c water 2/3 c vegetable oil 1 Tb Key lime juice 4 ea eggs For topping: 1 c. confectioners' sugar, 1/2 c. water, 2 Tbs key lime juice. Beat the cake mix, water, oil, lime juice and eggs just until ingredients are blended and no large lumps remain. Pour into greased %26amp; floured tube or bundt pan and bake 55 minutes at 350 degrees, or until cake tests done. Cool cake in pan until lukewarm, then poke holes into cake with a large fork. Blend together the topping ingredients thoroghly, then pour topping over all. Key Lime Cake





INGREDIENTS


1/2 cup butter, softened


1 cup white sugar


2 eggs


2 teaspoons grated key lime zest


1 1/2 cups all-purpose flour


1 1/2 teaspoons baking powder


1/4 teaspoon baking soda


1/4 teaspoon salt


3/4 cup key lime juice





DIRECTIONS


Cream together the butter or margarine and 3/4 cup sugar. Beat until light and fluffy. Separate the eggs. Beat in the egg yolks one at a time, and add the key lime zest.





Sift together the flour, baking powder, baking soda, and salt. Add these dry ingredients to the egg butter mixture, alternating with 1/2 cup key lime juice.





Beat the egg whites until stiff, and fold into the batter.





Pour batter into a well greased 10 inch Bundt pan. Bake for 30 to 35 minutes at 350 degrees F (175 degrees C), or until cake tests done. Cool cake for 10 minutes in pan, and then invert onto cooling rack.





To Make Key Lime Glaze: Combine 1/4 cup sugar and 1/4 cup key lime juice. Simmer over medium low heat until a light syrup forms; this should take approximately 5 minutes. Use glaze immediately. Pour over still warm cake.

LIME DELIGHT CAKE


Sift together: 3 1/4 tsp. double acting baking powder 1 tsp. salt 1 1/2 c. sugar


Add: 2/3 c. milk





Beat for 2 minutes until batter is well-blended and glossy. If electric mixer is used, beat at low to medium speed for same period of time. Add: 1/2 c. egg whites, unbeaten 1 tsp. vanilla





Beat for 2 minutes. Pour into 2 lightly greased, floured 8 inch layer cake pans. Bake in moderate oven (350 degrees) for 30 to 35 minutes. Makes two 8 inch layers.





LIME FILLING:


Blend together: 1/4 tsp. salt 2/3 c. sugar


Add 1 cup water and mix well. Cook over direct heat until thick, stirring constantly. Add a little of the hot mixture to one slightly beaten egg yolk; mix well and return to remainder of mixture. Cook over low heat about 2 minutes, stirring constantly. Remove from heat. Add: 1 tbsp. grated lime rind 2 drops green food coloring





Cool, spread between layers.





FLUFFY WHITE FROSTING FOR LIME CAKE:


Combine: 2/3 c. sugar 1/4 c. light corn syrup 3 tbsp. water 1/8 tsp. cream of tartar


Place in top of double boiler over rapidly boiling water and beat with rotary beater until mixture stands in peaks. Remove from boiling water. Add 1 teaspoon vanilla; continue beating until thick enough to spread. Frost sides and top of cooled cake and decorate with lime mints.

Ingredients:


1 (18 1/4 ounce) box lemon cake mix


1 (3 1/2 ounce) box instant lemon pudding mix


4 eggs


1/2 cup water


1/2 cup key lime juice (Nellie's and Joe's)


key lime juice, is available in most supermarkets along with the juice


1/2 cup canola oil or vegetable oil


2 cups sifted powdered sugar


1/4 cup key lime juice





Directions:


Preheat oven to 350掳.


Spray bundt pan with cooking spray.


Combine cake mix, lemon pudding, eggs, water, lime juice and oil; beat two minutes at medium speed of an electric mixer, stirring down sides occasionally.


Pour batter into prepared bundt pan; bake in preheated oven as directed on box.


Cool cake in pan for ten minutes, remove from pan.


When cool, drizzle with glaze.


For Glaze: combine powdered sugar and 1/4 cup Key Lime juice in mixer bowl; blend thoroughly.

Mix all ingredients together and bake at 325 degrees for 45 minutes.





ICING:





2 c. powdered sugar


1/3 c. lime juice





Mix well and pour over cake.

1 small box lemon instant pudding (approx. 3 oz)


1 cup water


1 cup vegetable oil


4 eggs


2 tbsp. key lime juice

2 cups confectioners' sugar


1/3 cup key lime juice





PREPARATION:





Beat eggs; add water, oil, lime juice, instant pudding and cake mix. Beat with electric mixer until well blended. Pour into well greased and lightly floured 9';x12'; pan. Bake approximately 50 to 55 minutes at 325 degrees. Prick top surface with fork while still warm, about 5 to 10 minutes out of the oven. Pour glaze over cake. Leave cake in pan.

In a large bowl stir together; lemon cake mix, lemon instant pudding, water, oil, eggs, and 5 tablespoons key lime juice, mixing well. Pour batter into prepared pan.


Bake at 350 degrees F (175 degrees C) for 45 minutes. Pour key lime glaze over cake while still warm.


To Make Glaze: Mix together the confectioner's sugar and 3 tablespoons of the key lime juice (or more if necessary), spoon glaze over warm cake
