Fast and Friendly Meatballs -- Make and serve on toasted hoagies and mozzerella cheese!!

INGREDIENTS

2 tablespoons olive oil

1 package hamburger

1 egg, beaten

1/3 cup Italian seasoned bread crumbs

DIRECTIONS

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with the olive oil, and place it in the oven while preheating.

In a medium bowl, mix together the ground meat, egg, and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.

Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you'd like. What is something new I can make with ground beef for dinner? With Recipes?
Homestyle biscuits Pre-made dough (they come in a tin of 10 and any supermarket generic brand or Pillsbury will work) or here's a recipe:

Stir together in a large bowl:

1 ½ cups all purpose flour

¼ tsp salt

2 tsp baking powder

add:

6 tbls cold butter cut into small pieces

Cut the butter into the flour with your fingers or a pastry blender until they are the size of small peas.

Measure:

¾ cups heavy cream

Remove 1 tablespoon and set aside. Lightly stir in the remainder of the cream with a fork until the mixture just comes together. Without overworking it, lightly knead the dough a couple of times in the bowl, turn it out onto a lightly floured board, and roll out about ¾ inch thick. Cut into eight 1 ½ inch circles or squares. Reroll the scraps if necessary.

Place the biscuits on a baking sheet lined with parchment paper and lightly brush the tops with the reserved tablespoon of cream. Bake for 17 minutes or until cooked through and golden.

******************

Cook ground beef in a pan with some finely chopped onion and whatever seasoning you like such as garlic powder, Cajun seasoning, Italian seasoning, etc. Add some other chopped veggies if you have any. When meat is done drain and season with a little salt. You couldeven add a little shredded cheese if you'd like.

Recipe:

Take the homestyle biscuits out of the can or if you made them roll them out and cut out circles with a biscuit cutter or old skool style, use a cup).

Make sure you let them rest a bit at room temperature before you pop the can or else they won’t keep their shape when you stretch it.

Take a rolling pin and work over a flat surface to flatten out the biscuits. When they come out of the can, they’re around 1 inch. They should be about 2.5 inches in diameter and almost as flat as a tortilla. Add flour to the surface if necessary so the dough doesn’t stick.

Take the flattened biscuit dough, place it flat on your palm and add about a tablespoon of filling in the center.

Fold the bottom to the top. The dough should now form a semi circle in your palm.

Pinch the top so that the filling is sealed. Make sure you pinch it tight.

Heat a non stick skillet and add a drizzle of oil (like 1-2 tablespoons).

When oil is hot, place the dumplings into the skillet.

Take a tablespoon of flour and a half a cup of water, mix it until it is incorporated completely and add it to the skillet.

Your dumplings should now be sitting in a cloudy mixture of water.

Put the lid on and cook for 5-8 minutes on medium-high heat.

When the cloudy mix of water has evaporated, the dumplings should be ready!

I would serve this with a side of sauteed veggies.
Easy Cabbage Casserole

I invented this because I love cabbage rolls, but I hate all the work involved!

1 cup rice (dry)

2 cups water

2lbs ground beef

1 tablespoon poultry seasoning

1 tablespoon dried onion

1 teaspoon salt

1 teaspoon pepper

1 small head of cabbage, diced

2 cans tomato soup

2 cans water

1/2 cup sugar

1 teaspoon poultry seasoning

Cook rice using water as normal. Cook only about half-way though. Rice will still be soupy with extra water. Add everything to meat mixture.

Combine meat with seasonings and rice. Spread over bottom of casserole dish.

Top meat with diced cabbage.

Combine ingredients to make sauce, pour over cabbage and meat.

Cover well with foil and bake for 2 hours at 350*.

Serve with more rice.

onions are optional
Well, it is a pasta, but it's really inexpensive and tastes so yummy. Brown your meat with onion and melt a small block of Velveeta cheese and toss over pasta. I use elbow mac. but you can use whichever you choose, and add two cans of tomato soup. Quick and easy and very cheap!

There are several kinds of good baked beans.

Hamburg Rolls

* season the beef with s%26amp;p and whatever else you wish

* make sausage-shaped rolls of the beef ... 1 inch by 5 inches

* cover them with purchased or home-made pastry and seal them with yolk beaten with a little cream,

then decorate the outside with small decorative pieces of pastry, brush with the egg mixture, make tiny slashes with the sharp tip of a knife to allow the steam to escape

* bake on a parchment-line baking sheet at 180*C / 350* F for about 25 minutes, or longer if you like your beef well-done.....watch them carefully

** I found this in a German cookbook ... it is part of their ';party food'; which is a genre all its own

** they are very nice with a green salad and some icy cold beer, serve on a plate with pieces of Muenster or Gouda cheese..... or one of the cheeses with cumin seeds...and German style pickles

Mexican Meat Pies

* cut 3-inch rounds of regular or flaky pastry dough, put in the middle a tablespoonful of a mixture of beef, salt, pepper, some chopped ripe green olives OR cilantro - not both since they cancel each other out --and a little little bit of hot pepper........ top with a plain round of pastry the same size, brush lightly with egg wash (one yolk with a tablespoon of cream), cut a little slash in the top to let the steam escape, and bake on parchment-lined baking sheets at about 350*F / 180* C for about 20 to 25 minutes, check in on them after 20 minutes.

* I have lived in several different Spanish neighborhoods, and everywhere I went, these were sold in the pastry shops, always 3 for $1.....they were a little smaller than what I suggested above, but I like the 3-inch ones since they have more meat and less pastry...and we always bought Cafe con Leche (Spanish coffee made with hot milk) and a gooey pastry to go with them.....like a flaky pastry filled with guava paste .....delicious !
