For a can of Salmon I blend in well, chopped green bell peppers, sometimes a Jalape帽o, chopped onion (sweet), 1 egg, Italian Style bread crumbs (these have Parmesan Cheese in them with the seasonings) and the Salmon (cleaned of skin and bones. I add the juice of the Salmon also.





Mix well and form into patties and fry them in oil. Not too much oil, you don't want them to float but enough to cook them well. I like using Crisco because it fries evenly.
I use one can salmon take bones out and keep juice, put in a large bowl...


add one egg


one small to medium diced onion


one small diced green pepper


1/4 cup flour





mix all together, rinse and dry hands,


Preheat cooking oil in skillet, maybe 1/4 '; deep to medium high heat not to hot,but enough your patties won't absorb the oil


Make patties in your hands and lay in hot oil, fry on each side till golden brown..remove and place on paper towels





(Tarter Sauce, save some of your diced onion, a tbsp of pickle relish(we prefer sweet) but you can use dill if its you prefer...and mayonise, mix and refrigerate till ready
I don't do hard things... try this.





SALMON PATTIES





1 (1 lb.) can salmon


1 egg


3/4 c. milk


3/4 c. cracker crumbs


1 tsp. chopped onions


1 tbsp. lemon juice


1 tbsp. flour





Mix together all ingredients. Use butter or shortening and brown in skillet on both sides. Makes 6 to 8 patties.





For Variety, add 1 Tbls Worcestershire Sauce, or 陆 tsp dill weed.
Hambone 2's recipe sounds about perfect, but all of them forgot to say to serve them with creamed peas.





You gotta have the creamed peas...
