SPICY ORANGE CHICKEN





1 chicken, cut up


1/4 c. flour


1 tsp. salt


1/8 tsp. pepper


3 tbsp. butter


1 1/2 c. orange sections


2 tbsp. brown sugar


2 tbsp. vinegar


1 tsp. nutmeg


1 tsp. basil


1 garlic clove, minced





Coat chicken with mixture of flour, salt and pepper. Heat butter in skillet, add chicken and brown both sides. Drain sections and more juice if necessary to make 1 cup orange juice. Mix together orange juice, brown sugar, vinegar, basil, garlic and nutmeg. Add to skillet. Cover and simmer 20 to 25 minutes or until chicken is tender. Add orange sections and simmer covered 5 minutes longer.What are some really spicey orange chicken recipes?

Here's how you do it. I learned this from my local chinese takeout place.





Cut up two or three chicken breasts and marinate in 2TBSP of soy sauce





Chop an onion and a carrot in small pieces





Get one can chicken broth and pour 1/4 cup of it into a small bowl and mix in 2 TBSP corn starch





you need 2 or 3 TBSP to 1/3 cup of hot chopped red pepper flakes (depending on how hot you want it)





1 package of hot chinese mustard





1/2 cup sweet orange marmalade





pour 2 TBSP oil in your wok and turn on high heat. Stir fry the chicken pieces and push them up the sides





Add the onions and carrot pieces and stir fry for a couple minutes. Add the chicken stock from the can (not the cornstarch stuff yet)





Add the pepper flakes and let this cook a couple minutes to infuse the heat.





Add the marmalade and mustard and let them disolve. Add the cornstarch liquid after you stir it thoroughly. Bring up the heat and it will thicken nicely.





Serve over rice with steamed broccoli florets. Enjoy!
