Taco Salad

1 lb. ground beef

1 envelope taco seasoning mix

1 can pinto beans, drained

1 head of lettuce, cut up

2 diced tomatoes

1 medium spanish or red onion

1 cup shredded cheddar cheese

1 bag of Nacho chips - smashed up

1 bottle of French dressing

Brown beef and add seasoning. Cool and drain fat. Set aside. In a large pot, mix the pinto beans, lettuce, tomatoes, onion, cheese. Add the beef mixture.

Just before serving, add the nacho chips and French dressing. (If prepared too early, the nachos will be soggy.)

Note: Unless I am serving a crowd, I usually divide everything by half.
1 lb lean ground beef, fried and cooled

1 head of lettuce, broken in pieces

2 diced tomatoes

1 diced onion

1 can drained light red kidney beans

1/2 to 1 lb grated cheddar cheese

PREPARATION:

Mix all together in a large bowl. Stir in 1 large bottle of Western Dressing. Chill and when ready to serve add 1 bag or crumbled Doritos or corn chips.
I just always start with your basic green salad. Use whatever greens you like, iceberg, romaine, butter lettuce. I always add fresh spinach to the salad greens. Tomatoes, onion, avocado, pepper, you get the idea whatever you like.

For the meat I brown my ground meat (sometimes beef, sometimes turkey) with onions, celery, and garlic. Salt and pepper the meat. I cover the meat with water as it cooks then drain it after the meat is done. We like our meat without added taco seasoning, but you can add a package of taco seasoning and a little water to the drained meat if that is the way you like it.

Put individual salads in a bowl or on a plate, top with meat and cheese. Never mix all the meat into the salad. That way you can reheat the meat if you wish or if it is not all eaten it will be good for leftovers another day.

Serve with salsa and chips.
