I'm looking for some recipes that I can prepare ahead of time. My wife recently injured her lower legs and finds it difficult to move around. So I was looking for something that I could prepare then stick in the freezer for her to pull out and microwave.Anyone know any recipes that you can prepare then freeze, and use at a later date?
You can freeze almost all foods nowadays, all the others have given you recipes and ideas, My input is to tell you if you have the room in your freezer, to plate up individual meals on a plate for your wife then, these can be taken out and thawed in your microwave (if you have a thawing programme that is) then cooked normally in the microwave.
I did this for years for my husband when he had to work night shift, and he took his meals into work with him like this. what I did was each time the family had a meal I plated up the exact same meal for him and froze it. So no extra cooking of special meals !!Anyone know any recipes that you can prepare then freeze, and use at a later date?

Yes, you can do this with almost anything.
Soups work great. For hearty soups, think split pea or lentil.
You could do any pasta and sauce recipe. Just cook the pasta half way, top with your favorite sauce and meatballs, and freeze in individual containers. The pasta will cook the rest of the way in the micro.
Fried rice also works well. Fry leftover rice with whatever vegetables you like, throw in leftover chicken, ham or egg, and freeze in little tupperware's.
Any stir-fry also works well. Just don't cook the veggies very much, as they will steam and get softer in the microwave. Think broccoli and beef strips, chicken, cabbage and green beans, or ham, cabbage and peppers.
I would also recommend that you freeze carbs and main-dishes separately. That way, it will be easier for her to decide what she wants. You can easily freeze spaghetti, Asian noodles and rice, mashed potatos also freeze well. Keep them in little containers. Then, when you make the stir-fry, meatballs, cream sauce or whatever, freeze a smaller portion separately. They will reheat better this way, and then she can make her own choice like meatballs with mashed potatos, or spagetti with stir-fried beef, or ham stirfry with tortillas which can can put together herself with some cheese.
I don't think there would be space to put all the recipes on here but you can freeze chili, vegetable soup (cream-based soups can sometimes separate and get watery but you can try a small batch to see if it works).
Spaghetti works pretty well too. I toss the pasta in oil and put it in a freezer container and then pour the sauce on. You can also freeze meat loaf (even after its been cooked). I like to get the segmented storage bowls and put whole meals in them, for example you could put in meat loaf, mashed potatoes (instant kind seems to freeze best), and peas, green beans, or any other precooked veggie and have it all there together when you're ready to heat and eat.
Also, you can find bagged frozen meals at the supermarket. There are some that you can cook in a crock-pot that are pretty good. Hope this helps you and that your wife is feeling better soon.
