What are some recipes for picky eaters?

A got the idea of making chicken nuggets with broccoli or spinach...now I would just like a few more!

So sorry, I'm back. I have a bunch of ideas 4 u. Firstly, post # 6 has the right idea. The food processor is your best friend. Hide the veggies in the back of the frig. Tell the kids those are all for you and ';Don't touch em!';. Most importantly process them when you're absolutely sure there are no prying eyes! You could even cook and process a bunch of veggies while the kids are in school and freeze em in zip bags. Label em with a code that only you know. Sneaky aren't I? HA!!


Ok, I'm gonna work on a few recipes 4 you and be right back.





Here we go......





*puree broccoli or peppers (a great source of vitamin C) and carrots and spinach (for a blast of vitamin A) to add to tomato and other sauces.


*If you've got a mac and cheese lover, mash some steamed cauliflower into the cheese sauce for extra nutrients.


*Meatloaf is a mixture of various foods, typically including ground meat, eggs, onions, and some bread crumbs. Adding a little shredded carrots and broccoli may give the meal a nutritional boost, but won't change the flavor.


*Chili is chock full of beans; grate or dice in some carrots, onions, mushrooms, and zucchini.


*Milkshakes and fruit smoothies are a great way to provide your child not only with calcium boosters such as milk and yogurt, but fruit as well. Try a variety — including strawberries, blueberries, raspberries, mango, papaya, and bananas — to discover which your child likes best. It's a great way to introduce vitamin A, vitamin C, potassium, and folate into your kid's diet.


*Quick breads and muffins are kid favorites — and a great ';hiding'; spot for carrots or zucchini, which have the added benefit of making muffins moist.


*Put the aforementioned tomato sauce with pureed veggies on a pizza.


*Make fruit juice ice pops. Get those popsicle molds at the grocery store. Add blueberries or other fruit chopped into bits for ';decoration';.


*Make mashed ';potatoes'; with cauliflower rather than spuds


(or mix the potatoes and pureed cauliflower 1/2 and 1/2 and add a little grated cheese, kids love cheese)


*Try pureeing a variety of vegetables with beans to make a spread you can smear on tortillas. Roll it up, top with cheese and place in the microwave. Serve with sour cream, salsa, and guacamole for fun dips.


*Try bananas on peanut butter sandwiches for an extra helping of potassium.


*Put pureed vegetables in a ';Cheesy Hamburger Soup';. Put little meatballs in a cheese soup and sneak in the veggies. Just make sure you use the right color (cauliflower is any white cheese, carrot is orange like cheddar or american. Stay away from green on this one, ew)


*Finely grate zucchini or carrots and add to pancake batter.





One very important thing to remember. You should introduce your kids to ';real'; vegetables and fruits at some point. Do it gradually. If you don't they will never have been exposed to them and will go off to college and their own lives and never will have learned to appreciate the goodness of them. Besides, you can't always control what they eat and they will eventually catch on to what you're doing and the result will be mistrust. Ask your self this. ';Would I prepare this for myself if the kids weren't around?'; If the answer is yes, then puree away. But if you're doing it to get one up on the kids, give it up after awhile. You may win this round, but psychologically, you're playing a game you're both destined to lose.


Also, most children will eat a meal that they helped to prepare. So, get em involved... have fun with it! (especially the 10 yr old)

Sneak 'N Slice Pizza Bites


* 1 (8 to 10-inch) flour tortilla, ideally whole wheat


* 1 to 2 Tbsp pizza sauce


* 1 Tbsp sweet potato or carrot baby food


* 2 to 3 Tbsp shredded low-fat shredded mozzarella cheese





1. In a mixing bowl, stir together pizza sauce and baby food.


2. Spread the sauce mixture onto the tortilla (stay 1/2 inch away from the edge).


3. Sprinkle on the cheese, and roll up into a log.


4. Slice and toast immediately, or wrap (unsliced) in plastic and freeze. When ready to eat, remove from freezer, slice into 4-6 pieces, and toast for a few minutes until golden brown.





OR





French Toast Rollers


Serves: 4





* 2 large eggs


* 1/4 cup low-fat milk


* 1/4 tsp each cinnamon and salt


* 1/2 tsp pure vanilla extract


* 1 Tbsp honey


* 1 1/2 Tbsp sweet potato baby food


* 1 1/2 Tbsp carrot baby food


* 4 slices of bread (ideally whole wheat)


Optional fillings:


* 1 Tbsp peanut butter + 1 Tbsp sweet potato or carrot or blueberry baby food (or other fruit spread)


* 1 mashed banana + 1 Tbsp sweet potato or carrot or blueberry baby food (or other fruit spread)


* 1 Tbsp light cream cheese + 1 Tbsp fruit spread





1. In a large, shallow baking dish, whisk together the eggs, milk, cinnamon, salt, vanilla, honey, and baby food or fruit puree. Set aside.


2. Use a rolling pin to roll out each slice of bread on a cutting board until flattened.


3. In a mixing bowl, mix the optional fillings. Spread about 2 Tbsp of the filling mixture on each flattened slice of bread, keeping about 1⁄4 inch away from the edges. Roll up each slice of bread, pressing to seal the edges.


4. Dip each log roll in the egg mixture until saturated on all sides, then cook in a well-greased skillet over moderate heat, turning to brown each side. Remove from heat and lightly dust with powdered sugar before serving.





OR


Hot Dog Fingers


1. Cut hot dogs in half, widthwise, and then lengthwise into quarters.





2. Open a package of crescent-roll dough and roll until very thin. Cut the dough into strips, and wrap around each piece of hot dog, leaving a little bit of the tip uncovered. Bake as directed.
How about chili? Lots of people like it. You can make it with beef, chicken, beans, no beans, veggie etc. This site has lots of options.

You might find something that you like at www.myfryingpan.com/ they have some really great recipes. I was able to get a young child I was babysitting for to eat a whole plate of the sauteed spinach with garlic, and he usually hates spinach!

Try using shredded carrots and zucchini in you spaghetti and lasagna use fun noodles and if you have a food processor they never now wats in there. Good Luck
